Changes Coming to Cordova Golf Course Eatery

A new owner may take over the restaurant if the district's board approves his contract.

An Elk Grove man may soon be granted the rights to operate the restaurant in on Jackson Road, with a portion of his proceeds going to the Cordova Recreation and Park District.

The park district's board of directors is scheduled to award the contract to Andrew Salas at its meeting Wednesday evening. Stuart Varner, the course's previous restaurateur, retired in January.

Salas was the only person who submitted a proposal to operate the golf course restaurant, despite the fact that district staff mailed out about 20 requests for proposals, according to a staff report.

"The [proposal] submitted by Mr. Salas shows an ambitious attempt to take over and completely reinvent the golf course restaurant by way of demolishing current ill-placed counter tops, refurbishing new electronic equipment, kitchen equipment, flooring, furniture, carpeting, painting and creating a fresh new indoor and outdoor patio ambiance," the staff report states. "Mr. Salas will provide all these changes at his own expense and is willing to personally invest more than $40,000 in capital improvements."

The district will receive 12.5 percent of Salas' "gross sales receipts, less sales taxes," according to the report. Salas has operated a catering business for 15 years.

Salas plans to call the restaurant Hackers Bar and Grill and could open by July, according to the staff report.
